Recipe Details
Whipping up this Walnut Chocolate Chip Cookies recipe is one of my preferred ways to spend an afternoon. We adore cookies in our home, and I know you will as well, once you savor these delectable treats. They’re a replica of Metropolitan Market’s renowned chocolate chip cookies and they’re heavenly!
- FLAVOR: These cookies are brimming with intense chocolate flavor and toasted walnuts. The dark chocolate offers a faint bitter taste that perfectly complements the sweetness.
- CONSISTENCY: These cookies are slightly crispy on the surface, yet exceedingly soft in the center. The walnuts contribute a pleasant crunch.
- TIME: This recipe takes 90 minutes.
- EASE: This is a straightforward cookie recipe that you will find no difficulty in making.
What You’ll Need
Ingredient Notes
- Belgium dark chocolate- This ingredient is extremely important as it adds a hint of bitterness to balance out the sweetness. Utilize high-quality chocolate.
- Semi-sweet chocolate chips- These are not overly sweet and impart depth to the flavor of these chocolate delights.
- Brown sugar- This adds a richness in flavor that you can’t achieve with white sugar due to the molasses content.
- Walnuts- Either purchase toasted walnuts or toast them yourself in the oven to obtain that wonderfully rich, earthy flavor without the bitterness.
- Vanilla extract- It’s preferable to use pure instead of imitation vanilla for better flavor.
Add-ins and Substitutions
- Exchange other chocolate- While this blend of dark and semi-sweet is my favorite, you can also swap in milk chocolate or white chocolate if desired.
- Make it allergen-friendly- Use gluten-free flour, omit the nuts, and utilize plant-based/vegan butter and chocolate.
- Substitute another variety of nut- Prepare these cookies with toasted pecans, almonds, hazelnuts, or cashews.
- Include old-fashioned oats- Incorporate some chew and texture by substituting 1 cup of oats for flour.
How to Make Walnut Chocolate Chip Cookies
- Filter the dry components. Filter the flour, salt, baking soda, and baking powder into a large bowl and set aside.
- Whip the butter and sugar. In the bowl of a stand mixer, beat the butter and sugars using the paddle attachment. Mix on medium speed just until combined. Then add in the eggs and vanilla.
- Incorporate the dry components. Add the flour mixture and mix until blended. Coarsely chop the toasted walnuts.
- Incorporate the chocolate and walnuts. Mix in the chocolate chips, shaved chocolate, and walnuts just until combined.
- Scoop the dough and chill. Scoop out the cookie dough using a large cookie scoop and place it onto a cookie sheet. Then refrigerate for at least 4 hours.
- Bake. Preheat the oven to 370 degrees Fahrenheit and bake for 10 minutes, or until golden brown around the edges.
Pro Tip: Shave the Belgium chocolate block when it’s at room temperature using a vegetable peeler, or you can chop it finely with a sharp knife.
Recipe Tips
- Use Belgium chocolate- I strongly suggest using Belgium chocolate. You can find it in markets that sell fine goods or online.
- Shave the chocolate- The key to achieving a soft center in these cookies is by using shaved chocolate. I simply purchase the block and chop it finely.
- Chill the dough- This step is critical for achieving really chewy cookies. As the dough chills, the sugar content increases due to water evaporation.
- Use a large cookie scoop- I recommend using a large cookie scoop for these cookies because they bake better in larger scoops. You can also use a 1/4 cup measuring cup.
FAQs
What is the key to chewy cookies?
The secret to achieving truly chewy cookies is to allow the dough to rest in the refrigerator for at least an hour. This helps some of the water in the dough to evaporate, thereby increasing the sugar content for chewier cookies.
Is it acceptable to use melted butter instead of softened?
For most recipes, it is acceptable to use either. These Walnut Chocolate Chip Cookies utilize softened room temperature butter, but if you use melted butter, they will simply spread more as they bake. Due to refrigerating the dough, the difference is less noticeable.
