    • Turkey Chest – To create deli turkey, we will exclusively use turkey chest. It is recommended to begin with a small amount and then advance to the entire turkey if required. I would recommend choosing a boneless, skinless turkey chest weighing between 1.5 to 3 pounds. 
    • Poultry Broth – To marinate the turkey, you will require one cup of poultry broth. If that’s all you have, other types of broths can also be used. However, in my view, poultry broth generally offers the best flavor. 
    • Seasoning – Lastly, you’ll need to sprinkle seasoning on the turkey chest while roasting to give it a delightful flavor. 

    For The Spice Mix

    • Margarine – To prepare the marinade for the spice mix, you’ll need to blend it with fat, and what could be better than margarine? Margarine will give it a crispy texture along with a rich flavor. You’ll need eight tablespoons of softened margarine; whether salted or unsalted, both will work. 
    • Red Pepper – Red pepper will provide the turkey with various flavors and a mild spicy touch, so we’re using two teaspoons of the same for this recipe. Smoked red pepper is my preference. Nevertheless, you can select any kind you prefer. 
    • Garlic Powder, Onion Powder, and Cumin – You’ll need a teaspoon of each of these seasonings as they will contribute an extraordinary flavor to the deli turkey. 
    • Chili Powder, Mustard Powder, and Black Pepper – Naturally, red pepper isn’t as spicy, so to provide the spice mix with a bit of heat, we’ll be adding ½ a teaspoon of each of these seasonings. 
    • Rosemary and Thyme – Dried herbs once again assist in enhancing the turkey’s flavor, so we’ll use ½ a teaspoon of each of these. 
    • Honey and Light Brown Sugar – Lastly, only for a touch of contrasting flavors, we’ll include a teaspoon of each honey and brown sugar to the spice mix as it will also contribute to providing the meat with a caramelized flavor. 

    Steps to Create Deli Turkey

    1. Prepare The Spice Mix

    The initial step in preparing this roasted deli turkey is to create the spice mix. For this, take a large bowl, add all the previously mentioned ingredients for the spice mix. Blend it thoroughly with a whisk and set it aside. Your spice mix is now prepared. 

    2. Get the Turkey Ready

    Upon completion of the spice mix, you can start getting the turkey ready. To do so, start by rinsing the turkey and placing it on a cutting board or any clean surface. After that, dry it using a paper towel and position it with the skin side facing upwards. 

    Now, you can apply the spice mix to the turkey. Make sure you cover all parts of the turkey and also under the skin if your turkey is not skinless. Once the spice mix is evenly applied, tie the turkey with kitchen twine. 

    Cut long pieces of kitchen twine and keep them available. Fold the turkey in half firmly lengthwise. Subsequently, at 2-inch intervals, securely tie the kitchen twine around the turkey chest. Trim off any excess twine using scissors, avoiding overhang. 

    After securing the turkey with twine, wrap it tightly in plastic wrap. Once the wrapping is complete, refrigerate the turkey for a minimum of 8 hours or overnight. This step is crucial as it aids in proper penetration of the spice mix into the meat. 

    3. Prepare for Roasting

    After the 8-hour mark has elapsed, you can initiate preparing the oven and other elements for roasting the turkey. To begin, remove the turkey from the refrigerator and let it sit at room temperature for at least 30 minutes. 

    Subsequently, preheat the oven to 350 degrees Fahrenheit. While the oven is heating up, take the deep baking tray and pour in poultry broth or any other type of broth until the tray is half-filled with it. 

    Then, place the wire rack on top of the tray. Remove the plastic wrap from the turkey and position it on the wire rack. Sprinkle a generous amount of seasoning on the turkey chest and transfer the tray into the oven for turkey roasting. 

    4. Roasting and Marinating

    Once the turkey chest is in the oven, be sure to marinate it with the drippings and poultry broth collected in the tray below. For this task, a basting dropper will come in handy. Simply draw some liquid into the dropper and squeeze it over the turkey. Repeat this process at 20-minute intervals. 

    Ensure that the broth does not dry out. If you observe it drying out, add more broth to the tray. By following this method, the turkey chest should be fully roasted in 1 – 1.5 hours. 

    After an hour, I recommend inserting the probe thermometer into the turkey and checking the internal temperature. Once the thermometer displays 160 degrees Fahrenheit, the turkey is ready, and you can take it out of the oven. 

    5. Slicing Turkey

    When the turkey is prepared and out of the oven, use tongs to transfer it to a clean surface or better, a cutting board. Loosely cover the turkey with aluminum foil to allow the released juices to distribute throughout it.

    However, this step is only recommended if your turkey chest is skinless. If it has skin, then this step should be avoided as it will make the crispy skin very soggy. After 10-15 minutes, remove and discard the foil. 

    Thereafter, carefully cut the kitchen twine with scissors and discard it. Your deli turkey is now ready! You can proceed to carve, slice, or shred it according to your preference!
