En Croute is a French term for preparing something in a pastry shell. So baked brie en croute is baked brie cooked in a shell. In our case weโre wrapping it in a pastry shell!

Elements + Replacements
- Brie โ You can use a 16 ounce wheel of brie or an 8 ounce wheel of brie. The large wheel of brie will not fit completely into the pastry shell, but it will still work just fine!
- Pastry Shell โ Ensure youโre using a flat refrigerated sheet of pastry shell. Not the frozen type already in the tin. I use Pillsbury that can typically be found in the refrigerated section next to the biscuits.
You can also make your own pastry shell for wrapping the brie if you prefer, but Iโve found that the refrigerated dough shortcut works very well and produces a tender flaky shell for the brie that Iโm very pleased with.
- Egg Wash โ An egg wash, made with a mixture of egg and water, is brushed over the pastry shell to help it become nice and golden in the oven.

- Baked Brie in Puff Pastry โ Exchange the pastry shell with puff pastry dough for an even lighter, fluffier, flakier option. Keep in mind that it might bake differently than pastry shell, so monitor it to avoid overcooking.
- Baked Brie with Jam โ Prior to assembling the baked brie, spread a layer of your favorite jam onto the pastry shell. You can use a fruitier jam such as raspberry, blackberry, or peach OR you can use something more savory like jalapeรฑo.
- Baked Brie with Cranberries โ Create a batch of homemade cranberry sauce and layer that into your appetizer.
- Baked Brie in Pastry Shell with Honey โ Top the brie or the pastry shell with a drizzle of your favorite honey. Try adding a handful of chopped walnuts or candied pecans for a bit of crunch.

Recipe Step by Step


Iโm going to emphasize a couple of significant steps within the recipe right here, but ensure to scroll down to the recipe card for complete directions on how to prepare cooked brie with Pillsbury pie crust.
- Stage 1— Utilize a toothed blade to shave the surface rind off of the wheel of brie. Itโs acceptable if thereโs a little bit bit left.
- Stage 2— Spread out the pie crust onto a leveled surface, then put the wheel of brie in the middle with the lower side down. Overlay the edges of the pie crust over the brie, move about 2 inches down, then raise the side up and over again to create a pleat. Continue until all edges of the pie crust are folded over the brie.
- Stage 3— Arrange a rimmed baking sheet with parchment paper, then position the brie, pleat-side down, onto the baking sheet. In a small dish, whisk together water and egg until combined, then brush that over the top of the pie crust.
- Stage 4— Cook the brie in pie crust until the top is glossy and golden and the cheese is delightful and melty.
Recipe Suggestions
- Use refrigerated pie crust โ The kind already in a tin and frozen wonโt work. You need the pie crust to be moldable so you can shape it around the brie.
- Use an 8 ounce or 16 ounce wheel of cheese will work โ With an 8-inch one, youโll get complete coverage so you can be more decorative with the crust. If you use a large wheel of brie, the crust wonโt cover the entire bottom, but thatโs okay! You wonโt see it because it will be on the bottom.
- Donโt skip the the egg wash โ Brushing the top of the crust with an egg wash is what gives it that delicious golden brown color. Without the egg wash, it will be much paler.
- Get creative! โ There really are tons of ways you can make this appetizer all your own. Play with herbs, fruits, jams, veggiesโฆyou (almost) canโt go wrong.

If you need to make this recipe, but are extra speedy on time, here are a few ideas that can help make this recipe even quicker!
- Prepare partially, then refrigerate โ To get things prepped ahead of time, you can fully assemble your brie and pie crust dish, but donโt bake. Instead, cover and store in the fridge, then bake as directed when youโre ready to serve.
- Bake entirely and refrigerate โ Once baked, this brie in pie crust will be kept in an airtight container in the fridge for 1-2 days. So, if you want to get a little bit ahead, you can bake it in advance, then reheat it whenever youโre ready to serve.

Continuez ร avancer autour de la meule en crรฉant des pinces jusqu’ร ce que tous les bords de la pรขte brisรฉe soient repliรฉs sur le brie. La pรขte ne recouvrira pas complรจtement le brie, mais c’est normal car ce sera le dessous.

- Placez le brie cรดtรฉ pincรฉ vers le haut (cรดtรฉ lisse vers le bas) sur une plaque de cuisson recouverte de papier sulfurisรฉ.
- Badigeonnez avec le mรฉlange ร base d’ลuf et faites cuire 20 ร 25 minutes.
Brie farci en croรปte de tarte
Si vous souhaitez ajouter des saveurs et des garnitures supplรฉmentaires, vous pouvez le faire ร l’intรฉrieur de la pรขte brisรฉe ou sur le dessus de la pรขte brisรฉe. Pour ajouter ร l’intรฉrieur de la pรขte brisรฉe, ajoutez simplement la garniture sur le dessus du cรดtรฉ infรฉrieur du brie avant de l’envelopper dans la pรขte brisรฉe.
