    • Loosen the chicken’s skin to facilitate seasoning.
    • Apply salt under the chicken’s skin and season adequately with sea salt and pepper.
    • Sprinkle salt inside the chicken’s cavity, then fold and position the wings behind the shoulders.loosely wrap it and refrigerate for a while. It is advisable to keep it in the fridge overnight.
    • Remove the poultry and position it in a baking tray.
    • Put the fowl in the oven and cook it for about 30 minutes.
    • After 30 minutes, flip the bird. Roast it for approximately 10-15 minutes and then turn it to make the skin crispy for a while.
    • Slice the loaf and place it in a bowl. Combine chicken stock and olive oil with it and gently stir them.
    • Transfer it to a pan. Use a kitchen towel to absorb any excess liquid. Then, lay the chicken over the bread mixture.
    • Coat it with some oil and sprinkle black pepper on top.
    • Bake it again for 15 minutes. Remove it and transfer it to the cutting board.
    • Now, blend some vinegar with extra virgin olive oil and salt and whisk it thoroughly.
    • Cut the poultry into small chunks and drizzle the pan drippings over the chicken. Next, pour the vinegar mixture on top. Present it with a salad of your preference.
