    • Transfer this mixture to a blender. Add ¼ teaspoon of garam masala, ginger garlic paste, peanuts, jaggery, and coriander leaves. Also, include ½ teaspoon of salt, ¼ teaspoon of red chili powder, cumin powder, and 2 teaspoons of water.

    • Cross-cut the eggplants.

    • Warm up the oil in a skillet and place the filled aubergines in it.

    • Heat a tablespoon of oil in the same skillet and sauté the onions until they become golden.
    • Include ¼ teaspoon of salt, ¼ teaspoon of paprika, ¼ teaspoon of mixed spices, 2 teaspoons of water, crushed tomatoes, and ¼ teaspoon of fennel seed powder.
    • Cook for a while. Then, add the cooked aubergine.
    • Mix well, cover with a lid, and let everything cook for five minutes.
    • Finally, add tamarind juice and a spoonful of fresh coriander leaves.
    • Thoroughly mix and serve piping hot.
