Lauki Kofta Recipe

For the Kofta
- In a bowl, combine 4 tbsp chickpea flour, 1 tsp green chilli, 1 tsp ginger, ½ tsp garlic, and 1 tsp dried coriander leaves.
- Add 1 tsp salt, ½ tsp cayenne pepper, ¼ tsp ground turmeric, grated bottle gourd, and some water.
- Blend everything to form a dough. Shape the dough into small balls.
- In a preheated pan, heat a tablespoon of sunflower oil and place the kofta balls in it.
- Cook the balls from both sides, then transfer to a plate.
For the Sauce
- In a preheated pan, add the remaining 1 tablespoon of sunflower oil and heat it.
- Add cumin seeds and roast them.
- Incorporate chopped onions and sauté them.
- Add 1 tsp garlic, ½ tsp ginger, 1 tsp green chilli, 1 tsp salt, ½ tsp cayenne pepper, ½ tsp ground turmeric, ½ tsp cumin powder, and ¼ tsp garam masala. Mix thoroughly.
- Add chopped tomatoes, cook over medium heat. Pour in ½ cup water, simmer the sauce until thickened. Garnish with cilantro leaves.
- Arrange the kofta balls on a serving platter, pour the sauce over them, and serve hot.
