Lauki kofta is a vegetarian Indian dish created with kofta balls made from bottle gourd in a zesty tomato-based sauce. These kofta balls are crafted by blending grated bottle gourd with binding agents and spices. The sauce consists of a mix of onions, tomatoes, and aromatic spices. The kofta balls are then immersed in the sauce for serving.

Bottle gourd, also known as Lauki in India, is undoubtedly one of the most commonly cooked and disliked vegetables in an Indian household. The aversion is not due to the taste of the vegetable but rather its frequent appearance on the dining table. Hence, Lauki kofta provides an excellent way to transform this detested vegetable into a delightful entree.

To prepare Lauki kofta, combine grated bottle gourd with chickpea flour and spices to create a dough. Shape the dough into small balls and deep fry them. Next, heat oil in a pan and sauté onions and cumin seeds. Add ginger, garlic, chillies, spices, and tomatoes to the pan. Simmer until thickened, garnish with cilantro, place the kofta balls on a plate, pour the sauce over them, and serve.
