- Take a bowl and mix spices such as cumin, paprika, garlic, salt, lime juice, and pepper to coat the fish.
- Add tilapia to the bowl and ensure the fish is well-coated with the spices. Refrigerate for at least 20 minutes up to 24 hours.
- In a skillet, heat olive oil over medium-high heat and sauté the shallots for a minute or two. Then, reduce the heat to medium and add the marinated tilapia, bell peppers, and tomatoes.
- Pour coconut milk into the skillet, cover, and simmer for 15 minutes with occasional stirring. Finally, add some coriander and simmer for another 5 – 10 minutes.
